Summer is here, and so is the heat. We’re trying our best to stay cool, both indoors and out, and in a noble, borderline desperate attempt to tip the scales in our favor and keep from boiling over, we made a delicious vegan dessert fit for a chilled-out summer: a vegan Om Nom Nom Cookie coconut sorbet “ice cream” sandwich.

You’re going to need:
1. Two (2) Om Nom Nom Orange-Zested Chocolate Chip Cookies
2. One (1) large scoop of your favorite coconut sorbet
3. Shredded coconut
Basically plop the sorbet between two cookies, shape the sorbet that pokes out from the sides of the cookie with a spoon, and sprinkle some shaved coconut on the sides. Voila! Super easy. Extremely effective. Alternatively, you can use frozen coconut milk or use an ice cream machine and make your own vegan ice cream!
